You start by asking "How many pink elephants are in this room?" The participants guess until you reveal that the correct answer, which is 8. Then you ask again, "Now how many pink elephants are there?" They guess until you reveal the answer is 7.

The secret is that the number of pink elephants is equal to the number of words in your phrase. For example:

"How about now, how many are there" - 7

"So, how many now?" - 4

"How many pink elephants are floating in the air above your heads?" - 12

Make sure that the words that are part of the questions are distinguishable from the previous thing you might have said. This is a great tricky game to keep bringing back out during down time.
